You can purchase bamboo countertops and tabletops that have been pre-finished with natural oils or beeswax if you intend preparing or cutting food on the surface. Or alternatively they can come finished with polyurethane finish that is stated to be food safe for the same purposes.
Or you can buy the countertop unfinished so you can apply the sealant or finish that most suits you and your lifestyle preferences.
Either way it is recommended to reapply whatever finish you are using to the surface at least once a year, particularly if the countertop is wiped frequently.
